I make a big batch of quinoa to keep in the fridge. My apartment gets the sun in the afternoon so dinners are always cold. I keep a bowl in the fridge so it keeps everything cool while I eat. (Lifehack - put your cereal bowl in the fridge the night before so it’ll keep the milk and cereal cold for summer mornings)

A couple of scoops of quinoa, and alternate between guacamole, salsa, guacamole & salsa, black beans, chick peas.
