    “fried fish with mac and cheese”??? It doesn’t even sound right! I must be missing something. Fried fish with rice & peas or dasheen or fungi or breadfruit, but never with mac & cheese.. okay, i’ll check it out but...

    “She offers simple tips for re-mixing our ‘Soul food’”. That’s cool, as long as it does not dilute the very things about it that helped us survive as a people. Lately some foodies have been looking down their noses on Soul food (slave food?), which pisses me off. I think moderation is key. And good ole reliable salt fish, i’ll fix it a thousand ways...Yea, i’ve got some cooking skills too, though more on the creole side.

    I’ll check out her projects/events... And here’s wishing your husband the best.

    I’m glad this was such a great, positive experience for you! Hope the new recipes work out with your fam because I relate sooooo hard to your son. I fucking love rice! (and McDonald’s too, let’s not lie) Would love an update sometime on if/how this class helped your family improve their eating!

    I wasn’t a fan of cooking and justified it by saying that eating out was more convenient. The truth is, fast food is the devil and will surely help kill you (yes, I know we’re all gonna die but, damn, make the Grim Reaper work for it)

    I’ve been a vegetarian for 6 months and I love cooking, creating good, healthy meals (and saving lots of money in the process, it’s disgusting how much I was spending eating out, Popeyes, Wendy’s, Taco Bell, KFC, Burger King, etc. profits had to take a dive when I stop rolling thru their drive-thrus).

      It’s amazing how we think fast food is cheap at $10 or less for one person to gorge, while most people where I work either go out or get takeout every day for breakfast AND lunch! My wife and I (both vegan, and couldn’t be happier for it!) bring lunch every day (usually simple but delicious beans, with some veg and some sort of healthy crackers), and probably save upwards of $50 more than anyone we work with per week.

      Not to mention that most restaurant dishes consist of more food than a person should have in a whole meal AND a snack or two!  If you want to be healthy, you need total control over your food intake.

    At risk of coming across as a shill for a company, here is a tool that can help anyone both save time and cook many meals better: Instant Pot (or equivalent).

    Supper yesterday was vegan black bean soup made in the Instant Pot, and fresh bread (no involvement with the Instant Pot). The black bean recipe was taken from the Instant Pot recipe book, slightly modified by me to make it more spicy and flavorful. Food prep was a few minutes, cooking time was about an hour while I did other things, then follow-up food prep was just a few minutes more. Now my freezer and fridge are stocked with a bunch of servings.

    I’ve made everything from lamb shanks, to short ribs, to vegan soups in it.

    Supper tomorrow will probably be vegan curried split pea soup (made last week in the Instant Pot, taken from the freezer) and a side of kale (cooked tomorrow in the Instant Pot).

    My problem isn’t cooking healthy main meals. Chicken, fish, rice, steamed veggies are usually always on my menu. They are really easy to prepare. My problem is the crap I eat after and between meals. Its just too easy and taxes my will power. I wish I could just program my debit card to refuse to pay for it. Buying some fresh fruit, Accepted. Buying some chips and a soda , NOPE.

      What has helped me is prepping fresh fruit or veggies in small, 1-cup glass containers or jars in the refrigerator that can be easily eaten.

      It also makes me feel sad that this is my life, but hey, at least I have low blood pressure & cholesterol!

    Out here in Oakland/the bay area, my friend Chef Cregg teaches cooking classes for individuals or small groups. He can come to you, or you can visit him. He offers a variety of classes, and everything he makes is delicious.

    He will walk you through making a meal, and even send you home with awesome leftovers. He’s based in Oakland but travels throughout the bay area. Highly recommended!

      Himalayan salt actually has a different flavor. All of the various types of salt do! Himalayan is mined rather than taken from the sea. If you’re worried about pollution, it’s possibly cleaner.

      That said, you consume so little salt at any given time...

      The flavors and behaviors of the various salts really are different enough that different salts are suited to different uses. Moisture content is one factor - that Sel Gris (grey salt that was dried in clay drying ponds) will behave differently than Kosher (which is typically commercially produced, and very very dry) or Fleur du Sel, which is light but with bigger pieces. Salting a baked potato and salting soup are really different too.

      Lifehacker is great (unless the misuse of the word “hacker” is grating, but personally I’ve given up on that one). But it ain’t a food blog. That post was just an ill-informed lukewarm take. She admits she can’t tell the difference, so why be so ranty and dismissive about it? We can’t all be Margary.
