What kind of access to my data/information does this give to Speedify?

This is the most important question. I suppose you can use a VPN with it all the time, but anytime I see a company that modifies my routing, I get very nervous.

On my Galaxy S6, it auto-disconnects my data connection when making a phone call. Will this remedy that?

You must have “Advanced calling” enabled on your account or you won’t be able to use data / voice at the same time. But apparently this could lead to choppier calls if you’re not in an area with strong 4G coverage, or if you pass from an area of 4G to 3G coverage.

If I’m reading this right, and I think I am, you can’t combine two streams of the same type, correct? Say, if I’m on hotel wi-fi, but there’s also a coffee shop wi-fi within range?

http://support.speedify.com/article/117-how-to-combine-two-wi-fi-internet-connections From the sounds of it as long as they’re not coming from the same router thus using the same upstream channel it’s a possibility.
