I liked America’s Test Kitchen’s video on how to get the meat out of a lobster. I particularly liked using a rolling pin to roll the meat out of the legs.

This is really awesome. Might not have a rolling pin at a restaurant, but this is great for the home!

I prefer to do something like this instead. Still break off the tail, but insert the fork perpendicular to the meat at the opposite end and sort of twist it out. Works best when the tail is still held in the curved position instead of straightened out. Then you have a tail on your fork instead of a fork that has a handle covered in lobster goo from being shoved inside the hollow tail.

Bad chart. You can’t simply suck the meat out of the legs, or scoot the meat out of the tail like that. You need to squeeze the meat out of the legs with your teeth. And to get at the tail you need to either crack or cut the bottom side of the shell. If you’re used to it (and its a not a huge lobster) you just hold the tail belly up in both hands. Your fingers get curled aroundand pressed flat against the top of the shell. Your thumbs hook over the edges of the tail, grasping the little tabs of carapace that extend beyond the tail. Then you just pull to the side with the thumbs, while pressing on the center of the shell with your fingers.

It’ll crack right open. If that doesn’t work for you, snip down the center of the thinner shell of the bottom of the tail. Then follow the above. Boom tail meat.

Also for the body its not as simple as “picking out the meat inside”. You need to break each individual cell to get at the meat inside, you’re basically breaking into little self contained sections of shell housed above the legs. There’s no meat just sitting there once you crack the thorax in half.

Mostly irrelevant, but the infographic reminded me of this:
