    For some writers it's really hard when they want to be Gay Talese or Hunter Thompson and they just don't realize they and their writing aren't interesting enough to justify the self-indulgence. Maybe they have clearly gotten away with it in the past, but it's a fine fine line. But at that point blame the editor for not saying. Enough.

      I'm only really familiar with two of Talese's pieces — Frank Sinatra Has A Cold and The Kingdom and the Power — and I don't remember either of those being self-indulgent at all, particularly the latter. My memory may be faulty, but it seemed like Talese kept himself at a good remove from his narrative.

        Myoglobin which is similar to blood in that it stores oxygen in the muscles if I remember my Good Eats correctly.

        Also, another fun fact, searing meat does not seal in the flavor or the juices. It is the carmelization of the meat bringing more flavor to it through the Maillard reaction.

        Lastly, why are you pressing down on that hamburger when you grill. Stop that. Can you even explain why you do that? No? Stop!
